Curry is one of my favorite spices.
Just a whiff of the aroma sends me to distant lands.
When all else fails, a little curry will liven any dis.
So I’m here to give you one of my most beloved curried salad recipes.
What You Need for the Salad:
- 4 cups grated carrots, (approximately 10 medium carrots, grated)
- 2 cups green papaya, sliced into 1/2-inch long pieces
- 2 cups snow peas, sliced into 1/2 long pieces
- 1/2 to 1 cup dried cherries
- 1 cup pineapple
- 1 bunch scallions thinly sliced (optional)
What You Need for the Dressing:
- 1/2 cup raw cashews, soaked for at least six hours and drained
- 1/2 cup fresh almond milk
- 2 teaspoons sweet yellow curry powder
- 1/2 teaspoon tamari
- 1 tablespoon agave
- Himalayan Sea Salt to taste
- I like to add 3 drops of lime essential oil to this dressing.
What You Need to Do to Make it Happen:
1. Combine carrots, snow peas, green papaya, pineapple, dried cherries and scallions together in a large bowl and toss.
2. Blend all the dressing ingredients in a high-speed blender until smooth.
3. Toss salad in dressing
