This is incredibly easy to make, so really, no excuses if you want to be eating a bit more sweet potato.
And you should, they’re great for you! They are packed with fiber and vitamin A, along with a host of other nutrients. In Chinese Traditional Medicine, they’re good for the Spleen, or Digestive Qi. So, they’re really helpful for people with stomach issues. Cooking them this way is easy, quick and healthy, and it makes a wonderful side dish or snack.
All you need is:
- 2-3 sweet potatoes
- 1-2 tbsp olive oil
- a dash or two of paprika
- salt and pepper to taste
- (and an optional sprinkle of parmesan cheese)
To make them, start by peeling the sweet potatoes [or, don’t, mom says the skins are yummy and loaded with nutrients!]
Then cut them up into french fry shapes (or really any shape that strikes you as fun), and then toss them quickly in the olive oil. Lay them out on a baking sheet and then place them in the oven. Bake at 450 degrees for about 20 minutes or until they’re golden on the outside. Take them out of the oven and serve. Sprinkle some parmesan on top if you like, or eat them with a little mustard to dip (my favorite!).
