I was in Singapore recently, which is where I had my first taste of palak paneer.
Spinach has been a long-time favorite food of mine, but this recipe is a new twist on an old favorite!
Here’s what you’ll need:
- 16 oz spinach
- 12 oz of paneer cheese, (or a semi-soft white cheese, like goat cheese)
- 1/2 cup yogurt
- 5 cloves of garlic, minced
- 1 thumb sized piece of ginger, minced
- 1 serano chili, minced
- 1/2 tsp garam masala
- 2 tsp ground coriander
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 3 tbsp in oil
Start by blanching the spinach in boiling water. Then, you can either pop it in the blender or give it a good fine chop. Then, in a pan, fry the garlic, ginger and chili in the oil. Once it’s all fragrant and sizzling, add the spinach. Immediately add the yogurt and all of the ground spices. Cook for about 3-5 minutes to let it combine, stirring constantly. Then chop the cheese roughly into cubes and add it to the green sauce. Serve immediately with rice, or with some Indian flatbread like naan or paratha.
