Brain-Boosting Blueberry Smoothie [Raw vegan, GF, oil-free, grain-free, soy-free]
Smoothies are a great, simple way to sneak in extra fruits and veggies. I almost always add kale to my smoothies for an extra dose of vitamins and minerals, as its bitter taste is perfectly masked by the natural sweetness of fruits! Smoothies are my favorite breakfast or snack when I’m on the go and need a quick boost of energy. In this delicious recipe, blueberries, banana, kale and ginger combine to create a sweet, hearty drink with a little zing. Blueberries are an antioxidant powerhouse and have actually been shown to improve cognitive function (hence, this smoothie’s brain-boosting powers!). Kale is a powerful detoxifier that also contains anti-inflammatory compounds, and bananas are loaded with potassium, fiber, and many other vital micronutrients.
Ingredients: makes 2 servings
- 1 cup almond milk
- 1 ripe banana (frozen if desired)
- ½ cup frozen blueberries
- 2 cups kale
- 1 inch ginger
Instructions:
Combine all ingredients in blender, and blend until smooth and creamy.
