Vegan Roasted Apple & Pumpkin Butter

I set this spread out as an appetizer this Thanksgiving and I swear, it disappeared better than Houdini himself. Bring this to any one of your holiday parties this winter and it is sure to be a huge hit. You can even try making a double batch and leave your host/hostess with their own jar as a gift…’tis the season!

Ingredients: 

  • three apples, halved, cored and roasted (400 degrees for 20 minutes)
  • 1 can pumpkin puree
  • 1/3 cup maple syrup
  • 3/4 cup water
  • 1/2 tsp cinnamon

Directions: 

  1. Blend all ingredients together in a high-speed blender (or food processor).
  2. Eat immediately.
  3. Try this with a piece of cheese (vegan of course), sliced apple or even a heaping scoop in your breakfast smoothie. This stuff is the bomb!
