Who can say no to cookies, especially ones that pack some nutritional perks like omega 3’s!? Over the years, I have perfected this recipe to provide the deliciousness and indulgence of a cookie with the added benefits of some healthy ingredients. Try it out for yourself!
Ingredients:
½ cup cashew butter (store bought or homemade – see my easy way to make it below*)
1 egg (can be made with egg replacement if vegan)
1/3 cup brown sugar (slightly more or less depending on sweetness level desired)
1 tbsp of flaxmeal or chia seeds
½ cup of oatmeal
½ tsp of baking soda
Optional: chocolate or cacao chips
Directions:
Preheat oven to 350 degrees. In a medium bowl, combine cashew butter, egg or substitute, flax meal or chia seeds, and brown sugar. In a separate small bowl, mix oats and baking soda. Add mixed oats and baking soda to the medium bowl and combine. Add cacao or chocolate chips if desired. Plop 1 inch rounded balls of dough onto a cookie sheet (dough will be sticky). Bake 8-12 minutes until edges are slightly crisp and browned. Let cool slightly before eating. Bon appetit!
*To make your own cashew butter, place ½ cup of raw, unsalted cashews into food processor. Add approximately 2 tablespoons of melted coconut oil. Pulse until creamy, adding a little more melted coconut oil if necessary.
