Hap’s Pecan Tea Biscuits aka Snowballs

An X-mas favorite from my childhood

Ingredients:

  • ½ cup soft butter
  • ¼ tsp. salt
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1 cup toasted pecans
  • 2 tbsps. sugar

Toast pecans in 325-degree oven for 7 minutes. Cool. Chop in food processor. Set aside.

Mix: butter and sugar for 10 minutes until color darkens and texture changes (you’ll know it when you see it)

Add: pecans and flour, mix until even, about 30 seconds

Preheat oven to 350-degrees

Roll dough into 1 to 1.25-inch balls and place on greased cookie sheet.

Cook 15 minutes, reduce temperature to 300-degrees cook another 7 minutes until cookies are lightly browned.

Remove and roll in confectioners’ sugar and place on cooling rack.

Enjoy!
