I’ve seen homemade Twix Bars recipes pop up on my social media quite frequently lately and for good reasons—being health-conscious doesn’t mean you can’t enjoy yummy desserts!
Homemade goodies are the best way to control what goes in your food and make sure what you are eating is both healthy and tasty.
When I saw that This Rawsome Vegan Life jumped on the train to deliciousness, I adapted her recipe to what I had in my kitchen in the rainforest of Costa Rica and made these amazing raw and vegan desserts.
Here are the ingredients you will need:
Cookie layer
1 cup of quinoa flour
1/3 of cup maple syrup
A pinch of salt
Caramel layer
3/4 cup of dates
1/3 cup of peanut butter
3 tablespoons of coffee (or water with lemon)
2 tablespoons of coconut oil
Chocolate layer
1/3 cup of melted coconut oil
1/4 cup cacao powder
1/4 cup maple syrup
2 teaspoons of vanilla extract
Directions:
1. Cookie layer
Mix the ingredients until you get a nice consistency—not too liquid or hard. I spread it in a cake mold since I didn’t have anything fancier. Note that it is way easier to spread with your fingers than with a spoon and you get to lick your fingers after too!
2. Caramel layer
Leave the dates in water for 10 minutes. Put the water or coffee in your blender first so that the blades are surrounded by liquid (it makes it easier to mix ingredients). Put all the other ingredients in, and blend! Once you obtain a nice paste that is roughly the same consistency than the cookie layer, spread it heavenly on top of the first layer. Leave the two layers in the freezer for around an hour. Once they are hard, cut small bars out of it.
3. Chocolate layer
This one is easy! Just mix the ingredients in a bowl and roll the bars in the chocolate you just made. I had to be quick with this step since the bars started melting pretty fast (it was a hot and humid day). You can also drizzle the chocolate over the bars if you prefer. This is a messy step and you’ll get chocolate all over your fingers!
Put the bars back in the freezer—I put them on a plate with wax paper in order for them not to stick to the plate or to each other. They look a bit messy, but I promise they are a thousand times better than the ones you find in supermarkets.
Leave in the freezer a few hours or an entire night, bring the rest of the chocolate to whoever is in the house, dodge the dog who is trying to steal your food.
