NUT LOAF
1 C ground nuts: Brazil, Walnut, Almond,
(your preference)
1 C brown rice or millet, cooked
2 large carrots, shredded
1 Parsnip, shredded
2 Apples, shredded
1 med onion, minced
Mix all in large bowl;
In small bowl, scramble 2 free-range organic eggs or equivalent chia or flax
Season w 1 T soy sauce
1 t salt
1/2 t pepper
2 t sage
1 T tahini
2 t turmeric
Mix well
Stir into nut/veg mixture
Pack into oiled loaf pan
Bake 350° 45 minutes
• serve on toasted bread w cranberry sauce & lettuce
or,
• with mashed potatoes & vegetable broth gravy
