Bloomsdale Spinach & Strawberry Summer Salad
I’m going to apologize before I even start typing to all of my Oregon friends as I hear it is still quite chilly up there, but it already feels like summer is in full swing here in L.A.! As such, I’ve been enjoying all the incredibly fresh, local produce (especially strawberries) from our farmers markets.
I find that if I stock up on fresh produce on Sunday at the Brentwood Farmers Market, I tend to be running low come Wednesday, which just happens to be the exact day of the Market in Santa Monica. Even more of a happy coincidence, most Wednesday mornings I am normally hanging out at Yogis Anonymous (practicing with the amazing Krista Cahill) which is right by the outdoor market…I must say, I feel pretty fortunate to lead the life I do!
After a romp around the market last Wednesday, I rounded up some amazing Bloomsdale spinach, strawberries, mint and walnuts to play with. And, as I’m starting to gear up for my summer cleanse beginning Monday June 18th (mark your calendars!) I’ve been trying out new, easy recipes to add to the meal plan. This one just so happens to fit the bill! I hope you will enjoy:
Ingredients:
salad
- 1/2 cup fresh strawberries
- 2-3 cups Bloomsdale spinach
- 1/4 cup fresh mint
- 1/4 cup walnuts
easy strawberry vinaigrette
- 1/4 cup fresh strawberries, chopped
- 1/4 cup balsamic vinegar
- 2 Tbs olive oil
- 1 Tbs raw honey or agave syrup
Directions:
salad
- Combine all ingredients in a large bowl
dressing
- Combine all ingredients in a glass jar (with lid) and shake until fully mixed.
- Top salad with dressing, give thanks, and enjoy!
