I want to share this recipe as it’s simply amazing.
I am an avid baker and this one always makes it to the top. It is flavorful, fulfilling and makes for a healthy breakfast or snack. Everyone loves it and people have been begging for my secret recipe, so here it is!
I have created organic, gluten free and vegan recipes to match different lifestyles, but feel free to mix and match!
General directions for all three versions:
- Combine all the dry ingredients in one bowl.
- Combine all the wet ingredients in seperate bowl.
- Mix the wet and the dry ingredients together until batter like.
- Pour into a greased nine-by-five-by-three-inch loaf pan.
- Bake at 350 degrees for 60ish minutes or until a knife comes out clean when inserted into the middle
Organic Version
Dry ingredients:
- 1 ½ cups of organic flour
- 2 teaspoons of organic baking soda
- 1 teaspoon organic cinnamon
- 1 teaspoon organic salt
Wet ingredients:
- 1 ¼ cup of organic sugar or ¾ cup of local honey (I like to use organic coconut sugar, but use what you like)
- 1 cup squishy organic bananas
- 2 cups of frozen organic raspberries—important that they are frozen (gently fold these in last)
- 2 local eggs
- 1 cup of really soft organic butter
Extra flavors:
- Fair Trade Chocolate chips
- Favorite nut (pistachios are surprisingly amazing- hard to find organic, though)
Gluten-Free Version
Dry ingredients:
- 1 ½ cups of gluten free flour—I like to use Cup 4 Cup
- 2 teaspoons of Organic baking soda
- 1 teaspoon organic cinnamon
- 1 teaspoon organic salt
Wet ingredients:
- 1 ¼ cup of organic sugar or ¾ cup of local honey (I like to use coconut sugar, but use what you like.)
- 1 cup squishy bananas
- 2 cups of frozen raspberries—important that they are frozen (gently fold these in last)
- 2 local eggs
- 1 cup of really soft organic butter
Extra flavors:
- Fair-Trade Chocolate chips
- Favorite nut (pistachios are surprisingly amazing and gluten-free)
Vegan Version
Dry ingredients:
- 1 ½ cups of organic flour
- 2 teaspoons of organic baking soda
- 1 teaspoon organic cinnamon
- 1 teaspoon organic salt
Wet ingredients:
- 1 ¼ cup of organic sugar—I like to use coconut sugar, but use what you like.
- 1 cup squishy bananas
- 2 cups of frozen organic raspberries—important that they are frozen (gently fold these in last)
- ** 2 tablespoon flax seed with 6 tablespoons water, See below on how to properly mix together
- 1 cup of Earth Balance
Extra flavors:
- Fair-Trade Chocolate chips
- Favorite nut (pistachios are surprisingly amazing)
**How to replace eggs using flax seed meal
Blend flax seed with water in a blender/food processor until the mixture is thick and creamy.
