When it comes to eating healthy, my main downfall are those rich savory and salty flavors.
Generally, I reach for the potato chips (don’t tell anyone!), but I can’t put chips in scrambled tofu or in my mac n’ cheese, so I present to you vegan bacon!
Mushrooms are one of my favorite vegetables because they are so versatile. They’re like the tofu of the vegetables.
Vegan Bacon
- 2 cups sliced mushrooms (I like shitake or portabella)
- 1 tbs + 1 tsp olive oil
- 1/4 tsp salt
- 1/2 tsp smoked paprika
- 3/4 tsp liquid smoke
Preheat the oven to 350 degrees. Set sliced mushrooms aside and mix the rest of the ingredients together. Pour the oil mixture over mushrooms making sure to coat all of them. Let them marinate for a least 20 min ( or up to an hour if you have the time).
Place the mushrooms on a baking sheet in a single layer and bake for 10 minutes on each side. Turn oven up to 375 degrees. Bake for another 10 min. on each side or until crispy.
Serve as a replacement in your favorite bacon-laced dishes!
